The not best of noon questions.

So I'm talking to my friend today about how my battery just dies here in Italy (I'm an American by birth, working in Italy, because if you can work and live in Italy, you should). So I say when I get back from visiting my family, I should buy a new phone. And he says, "well, just root it, it's probably all the Verizon bloatware you have on there." I say "hai ragione" and start thinking about it. He tells me this is the place with all the info I need. Now I know of rooting. I have a basic knowledge of programming and systems. I'm a fantastic mechanic/technician and can fix most anything. Taught myself basic php, html, and a few other programming languages. I feel fairly confident with the right information and guides I can tackle any project.
That being said, I know this is difficult. I'm not under any illusions that it will be simple or that I won't screw up and brick this thing.
So my question is. Verizon SM G900V S5, Android 5.0 where do I start? What do I need? What is the best way to get this thing running as a fine, unbranded phone?
