Why Galaxy S5 and other phone have different ROMS?

I want to Root my phone, I search some Apps to make it. But I found some phones like Samsung Galaxy S5, S5 has a lot of ROMS.

Any difference of them?

If I want to root my phone, do I need to find the ROM that my phone is?
